The production of bakery products consists of various processing stages in which humidity and temperature play an important role. In connection with the above ELPRO Adhesive we offer effective solutions for humidity and temperature control in baking.

To start, a little about the baking process …

It all starts with the preparation of the raw materials. Flour and sugar can contain different levels of moisture, which can adversely affect the quality of the final products or bakery products. Monitoring humidity is particularly important when predefined recipes are used in automated production lines.

After mixing, divide the dough into parts and leave it to rest for a few minutes. This step is important to allow the gluten in the dough to be released, thus facilitating the next moulding step. If the temperature is too high, the dough will be too sticky. If the dough is too cold, holes can form in the product (e.g. bread).

If the moisture content is too low before the dough is formed, a skin forms on the surface which prevents the dough from rising properly.

Proofing is the next important step, during which the dough reaches about 90% of the volume of the bread before baking. This process takes place in closed chambers where the conditions are optimal for the dough to grow. To ensure these conditions, regular monitoring and control of relative humidity and temperature is necessary.

Depending on the type of yeast and flour used, the ideal temperature is between 38-42 °C and the humidity between 70-80 % relative humidity.

Humidity and temperature control for baking

The key to a quality bakery product, therefore, is not only the use of high-quality ingredients and well-thought-out production steps. The quality of the dough requires careful control of the temperature and humidity in the baking utensils (e.g. baking tray, etc.). Modern bakeries also occasionally use special ventilation systems controlled by humidity and temperature sensors.
